Although there is no "Organic" classification for seafood in the United States (yet), there is one company that is doing what it can to be as close as possible. Loch Duart is a salmon farming company based in Northern Scotland that exports to the US. They have a 98.5% water to fish ratio, use no antibiotics or antifoulants, and employ a unique fallowing system to avoid environmental damage and product quality complications. Because of these and many other health-conscious interventions, Loch Duart salmon has a flavor, color, and consistency nearly identicle to Wild King Salmon.
